WHAT SUMMER USED TO FEEL LIKE

Summer vacations weren’t scheduled.

These were the moments that actually built our confidence and made us independent.

My toddler is in a carrot loving phase and what better way to celebrate her latest vegetable love than to add them to her next favorite food, muffins!

This recipe of healthy muffins for toddlers packs in carrots, zucchini and oats and is the perfect add to the toddler breakfast rotation.

I make a big batch on the weekend and freeze them for a quick no cook breakfast on the weekdays when we want to grab something and leave the house.

These muffins are also low-sugar, each muffin comes to about 5g of added sugar and rich in fiber and satiety.

We usually pair them with a glass of milk or if we are headed out the door I spread a little butter on the top before heating them in the microwave and then grabbing them to go. A little added fat helps with extra fuel and satiety for my little one.

These are also great as a daycare or preschool snack box addition.

  • 1 small zucchini grated

  • 1/4 tsp salt
  • Wet Ingredients
  • 2 eggs

Instructions
 

  • Grate the zucchini, squeeze out the water.
  • Grate the carrots and in a mixing bowl add both the carrot and zucchini with the rolled oats, whole wheat flour, cinnamon powder, nutmeg, baking soda, baking powder and salt.
  • In a separate bowl add all the wet ingredients and mix well until everything is combined.
  • Add the wet ingredients to the dry ingredients and combine well.
  • Transfer to muffin tray and bake in a pre-heated oven at 180 degree C for about 20 minutes.
  • Cool down completely and then serve.
    Can be stored in the freezer in ziplock bags for unto 1-2 weeks.

  • Mac and cheese (add cauliflower purée if tolerated by the child)
  • Mashed potatoes with butter and pizza peas on the side. (Pizza peas is basically boiled peas with some pizza seasoning, my picky eater likes peas when made with a familiar seasoning.)
  • Rice with scrambled egg. (add a little all-seasoning if the child likes food that’s well seasoned.)
  • Toast with peanut butter and jam. To add a healthier twist, you can try making a homemade strawberry-chia jam and see how it is accepted.
  • Cheese sandwich on whole wheat bread. 
  • Plain noodles with olive oil. If the child accepts slightly more flavor you can add a tomato sauce to the noodles.
  • Baked potato with cheese.

Protein-Rich Dinners

  • Mini cheese omelet.
  • Scrambled eggs with buttered toast fingers.
  • Baked chicken nuggets with potato mash and peas.

  • 1 cup lentil pasta (or any pasta of choice)
  • 1/2 cup frozen peas
  • 1/4 tsp salt

  • 1 tbsp olive oil

Instructions
 

  • Boil peas.

  • Transfer the paste in a pan and cook for 5 minutes.
  • Once the pea sauce is cooked add the boiled pasta and mix well. Add a little bit of the pasta water for a good consistency.
  • When serving grate some parmesan cheese on top.

  • Once the water comes to boil add the whole wheat pasta.
    Whole wheat pasta takes about 10 minutes to cook, accordingly add the broccoli florets around the last 5 minutes of cook time.
  • If using a quick cooking pasta type add both the broccoli and pasta together.
  • Once cooked serve in bowls squeeze a bit of lime juice and add grated cheese. Mix and enjoy!

Healthy First Birthday Cake | Smash Cake | No Sugar

Is your child’s first birthday round the corner? Are you looking for a healthy first birthday cake recipe? I’ve got you covered. This decadent chocolate flavored millet-based cake recipe is my daughter’s favorite. Whenever we are celebrating a milestone or family function, I quickly whip up this chocolate ragi cake and we all enjoy it together. 

I used to make this recipe with about 1/2 cup of jaggery but recently I tweaked the recipe when we were celebrating my toddler’s ‘1000 days on Earth’ birthday milestone. The sugar free version of this cake turned out so tasty, I decided this is how I will be making it from here on out.

This recipe is perfect as a smash cake or a healthy no added sugar cake for babies and toddlers. Plus, it’s made without eggs which is perfect for those with allergies.

No Sugar 1st Birthday Cake

Healthy first birthday cake | No Sugar | No Eggs

Ophira
A baby friendly cake recipe made using millet flour, dates and unsweetened chocolate powder, is perfect as a smash cake or as a celebration cake for under 2 year olds.
Prep Time 15 minutes
Cook Time 30 minutes
Course Dessert
Cuisine Indian

Ingredients
  

  • 15 Medjool dates (if smaller size dates use about 20)
  • 1.5 cup Milk
  • 1 cup Ragi flour
  • 1/4 cup Unsweetened cocoa powder
  • 1 tsp Pure vanilla extract
  • 1/2 cup Sunflower oil
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda

Instructions
 

  • Soak the pitted dates in warm milk for 20 minutes.
  • Preheat oven, 180 degree C for 15 minutes.
  • Once the dates are softened blend to make a paste.
  • In a bowl sift the ragi flour, cocoa powder, baking soda and baking powder
  • Once the dry ingredients are mixed and ready pour the date paste, oil, vanilla extract and combine to make the cake batter, make sure to not over mix.
  • Add some chocolate chips or chopped cashews and mix (optional)
  • Transfer to greased baking tin and bake in the oven at 180 degree C for 30 minutes. Or until an inserted toothpick comes out clean.

Notes

Notes : Variation for date-free cake
If you want to make a date-free cake, use 1/2 cup jaggery powder instead of dates along with 1/4 cup yogurt.
 
Recipe for the chocolate ganache
Pour ganache once the cake is completely cooled. The chocolate coating on top is made using half a cup milk chocolate chips and a tsp of coconut oil. Heated in microwave for 30 seconds and mixed to make the chocolate ganache.
Pour over the cooled cake and add sprinkles for fun!

Children are natural imitators. They copy how we speak to others far more than what we tell them to do.
