Hanukkah is the Jewish festival of lights. A time to celebrate miracles.
Long ago a war took place between the Jews (Maccabees) and their ruling king, Antiochus. Antiochus had ruled that Jews can no longer celebrate Shabbat and pray at their temple. He ordered his guards to go guard the temple and destroy everything inside.
What ensued thereafter was a war. After the Maccabees defeated Antiochus and his men and returned to the Temple, they found the temple looted and a mess. They built a new Menorah and looked for oil to light. But, they could not find enough oil to light the menorah for more than one evening and it would take them some time to find more oil. But the Menorah lit anyway. To their surprise, it burned for 8 days!!
It is this miracle that we celebrate on Hanukkah. We light menorahs for eight days and celebrate with foods fried in oil.

This is one yummy recipe to add to any festive brunch 😊 . . Ingredients: 6 shredded potatoes 2 eggs 3-4 tbsp of cornflour Salt to taste Pepper to taste Oil for frying Method: Shred 6 potatoes. Wrap them in a thin Muslin cloth and squeeze out all the excess water from the potatoes. Add these dry potato shreds to a mixing bowl with eggs and flour. Mix well. Season with salt and pepper. Shallow fry until crispy golden brown on each side. Traditionally served along with sour cream on the side. But I enjoy it as a tea time snack, similar to pakodas.😉 . . Garlic Roasted Broccoli Hey all, I am back with a garlic roasted broccoli side. This is an easy side to prepare and tastes amazing! Ingredients: 1 head of broccoli florets Garlic powder to taste Pepper to taste Salt to taste Olive oil – 2-3 tablespoons Preparation: 1. Wash and chop the broccoli into florets and make sure that the florets are completely dry. 2. On a baking tray spread the broccoli and sprinkle the spices, salt and olive oil. 3. Preheat oven to 400 degree F 4. Bake the broccoli for 20 minutes for crispy texture. At the 10 minute point stop and turn the broccoli florets around and restart again. 5. Serve hot with sriracha sauce or ketchup.
